
We worked hard to make a whole bunch of tortillas and then Israel asked, "Do you have some cheese?"
Of course we did. We were still wondering what it was for, though. Mom got the cheese out of the refrigerator and Margarita instructed her to grate it. Mom did so, obediently. Then Margarita placed a cooked tortilla on the frying pan. She sprinkled some cheese on the tortilla and placed another tortilla on top. When the cheese was melted she picked both tortillas off the griddle with her fingers and dropped them on a cutting board. She quickly sliced this Mexican cheese "sandwich" and begged us to try it. It was so good. Israel proudly said, "We call it, quesodilla."
Well, as you can imagine, from then on quesodillas were a permanent fixture in our home. We had them many, many times. They were good for snacks or for meals. We liked to have them plain or with salsa. Either way, they were great!
Corn tortillas, a tortilla press, a hot griddle, cheese, and Margarita and Israel changed our lives with their friendship and their quesodillas.
